You can use Linguist to change the like button translation, and you should be able to use an emoji that way.
It might not be good for accessibility though. You'd need an extension to update the markup if you want to add screen reader text or similar stuff.
Also other option, there is a reaction extension that replaces the like extension and uses emojis. Haven't checked if it's compatible with beta8.
