nesbot/carbon issue when installing flarum

When trying to install flarum, I run across the issue of:
"Carbon 1 is deprecated, see how to migrate to Carbon 2.
https://carbon.nesbot.com/docs/#api-carbon-2
You can run './vendor/bin/upgrade-carbon' to get help in updating carbon and other frameworks and libraries that depend on it."

Then when I try to run the command ./vendor/bin/upgrade-carbon it seems it is done, but I can't re-run the installer since it wants an empty directory and it makes changes to the json file.

Any previous posts that can refer me to the fix or any solutions?

I also have another issue after installation.

Right after I entered in the installation details (db/admin user), I'm getting an HTTP 500 error on that page.

I have set my /etc/apache2/sites-enabled/000-default.conf with the following addition:
