Run composer why-not flarum/core v1.0.1
It will let you know which extension is blocking the update.
From the message in the release discussion it seems like some extension have not been following our recommendation for Flarum version constraints. All extension should require ^1.0 of core which should mean no blocking during these minor and patch updates...
