My Original Post, titled "Cannot Update, Uninstall, or Install Extensions":
I've been trying to prep my forum to move to 2.0, but I've been having trouble with extensions for awhile now and I'm finally reaching out for help. It's almost like my Flarum install has decided to freeze my extensions exactly where they're at, and I haven't been able to manage them at all. All I can do is enable or disable the ones already installed.!
Attempting to upgrade through the Extension Manager will show me a list of options to update, but will give me an error to check the logs. (I'll post some samples of those logs below). Attempting to click the "Uninstall" option in the forum tells me, "Oops! Something went wrong. Please reload the page and try again." Running the commands through SSH removes the extension from the info list but it's still in the Admin panel of my Flarum and the folder on the server remains intact. SSH commands do not give errors.
I'm running Flarum 1.8.14, I upgraded last night because of the security issue, but I was having this issue before I did the upgrade, too. I also moved the server to php 8.5.7 today, but was having this issue also on php 8.3 so that's not changed anything.
I'll admit I did go a handful of months without running forum updates due to some sudden but overwhelming life stuff, so maybe I missed some important update in that time? Only thing I can think of. I'm out of ideas, and really hoping someone here can help.
And yes, I've run the commands to clear cache and migrate, and did not receive any errors on those.

My New Problem
So, in checking the error codes to paste them here, I saw that even when I was trying to update a completely different extension, the codes were yelling about resofire/discussion-participants. Okay, so maybe if I uninstall that one, everything will work correctly then! I read that's not compatible with the new Flarum anyway, so it did have to go.
So I went into the Extension Manager, disabled the extension, and clicked the "Delete". And it uninstalled, and took my forum with it. Now I get a 500 error.
I'm... honestly not sure what to do next? "php flarum info" won't even run at this point. But all I did was click the "Uninstall Extension" button!
I do have a backup, so I could have my laptop spend the night copying the old files back into the server, and go from there.
But at this point... Maybe it would be better to just do a fresh install? Would I be able to link up the old database correctly if I did it that way, though?
I don't know, what's the best way to salvage this here?
