Never suggest running composer update please. This will update all dependencies, even to the point where they haven't been tested yet.
In case you previously had a vendor folder you also most likely have a composer.lock. In that case and even if it's missing always use composer install, here is the one you need if you are not a developer:
composer install --prefer-dist --no-dev
