CNMathon You can append a specific version onto the composer require or update request to select it, so the result would look like composer require flarum/core:v0.1.0-beta.10
I don't recommend doing this, however, unless you know what you are doing (e.g. you are an experienced Flarum or laravel developer). Can you tell us what you're trying to achieve first before attempting this?
