Update to Beta 11 on Plesk

I'm using a plesk panel. I updated flarum with ssh. Data says it's out of date.

You might have to first composer require kilowhat/flarum-ext-mailing to update to the 0.2.* version which supports beta 11

Depends what kind of update.

To update to the next minor version, composer update without additional parameters will update everything to the next minor.

But if some extensions have new major versions, like kilowhat/mailing had, then you will have to include call composer require <package>. You can pass multiple packages at once though. (composer require vendor1/package1 vendor2/package2)

You can use composer info --outdated --direct to see which extensions might have updates, or use Bazaar. In the composer info output, packages in red can be updated via composer update, while packages in orange must be updated with composer require <package> I think.
