Do keep in mind that not all extensions have the code necessary to delete all their data - and some may error because they don't have what are called "down migrations" (oops). I think most extensions do not remove settings stored in the settings table - otherwise most data should disappear just fine.
I don't think this behavior is tested much at all, so do be aware that they may not work as intended.
