I can access admin panel. Tried to clear cache, but didn't helped.

Well something is definitely broken. I can access the API just fine. So I assume something has gone wrong with the redirects; can you share your htaccess?

I'm having a hard time understanding why this is happening, but it is 100% a server issue.

Some tests seem to imply nginx is serving the site as application/x-httpd-php; so perhaps that's the issue. But how this came to be, no idea. Do you have any information on your hosting environment? Any proxies or anything?

This error was due to Siteground "NGINX DIRECT DELIVERY". It must be turned off.

Why everything worked fine for almost a month, and now we need to disable this function, Siteground technical support did not know:

Possibly it needed to reference something that NGINX is giving it trouble with and started giving the issues.
